My husband brought a few bags of rhubarb home from work one day that one of the guys gave him at work.
I wanted to do something a little different. Strawberry and apple seemed to be just the thing.
So here is a recipe for Strawberry, Rhubarb, Almond Apple pie.
The ground almond really gives it a nice twist.
Ingredients
3 cups peeled slice apples
2 cups rhubarb
2 cups sliced strawberries
1 1/2 cups sugar
3/4 cup cornstarch
fresh lemon juice
TOPPING
3/4 cups flour
1/4 cup sugar
1/4 cup brown sugar
12 – 15 ground almonds (if you have some almond chunks in it that's fine)
pinch of salt
4 tbsp butter
PREHEAT OVEN 400
Combine sugar and cornstarch.
Combine fruit and lemon juice.
PREPARE CRUST
Coat the bottom of the pie crust with egg white.
Bake at 375 for approximately 5 minutes.
Sprinkle a bit of sugar mixture on the bottom of the pie shell.
Place 1/2 of the fruit mixture on it.
Cover with half of the sugar mixture (or to taste).
Do it again.
Combine topping ingredients.
Sprinkle on the top.
Dot with 1 tsp butter.
You can either leave it as a 1 crust pie or put a topping on or lattice.
Bake 20 minutes at 400 then reduce temperatures to 375 and bake for another 30 – 35 minutes.
You can cover the crust edges with tin foil if they seem to be over browning.
