Whole Wheat Apple Flapjacks
What You Need:
- 32 soft caramels
- 1 (12 oz) can evaporated milk
- 1 C unsalted butter
- 2 Gala apples, peeled and diced fine
- 2 eggs
- 2 TBSP light brown sugar, packed firm
- 1/2 tsp. vanilla extract
- 1 C all purpose flour
- 1 C whole wheat flour
- 2 tsp. baking powder
- 2 tsp. ground cinnamon
- 1/8 tsp. salt
How to Make It:
- Place the caramels in a microwave safe bowl.
- Pour the evaporated milk in the bowl with caramels.
- Microwave on high 1 minute.
- Allow to stand in the microwave 1 minute.
- Microwave on high an additional 1 minute.
- Add the butter.
- Microwave an additional 30 seconds on high.
- Remove from microwave and stir to blend ingredients together well.
- Fold in the apples.
- In a separate bowl whisk the eggs and brown sugar together.
- Add the vanilla and whisk until well blended.
- Fold in the caramel mixture.
- Sift the flours, baking power, cinnamon and salt together in another bowl.
- Stir the moist mixture into the dry mixture just until combined and dry mixture is moistened.
- Heat a skillet over medium heat until hot.
- Add oil to the hot griddle to cover.
- Place 1/4 C of batter in the hot skillet.
- Cook 2 minutes or until bubbles appear around the edges.
- Flip and cook an additional 1 minute or until golden brown.
- Continue until all the batter has been used.
Makes 20 pancakes
To keep pancakes warm place them on a plate in a low temperature oven.
