Cranberry Stuffed Apples
What You Need:
- 1/3 C canned whole cranberry sauce
- 1/4 tsp. orange zest
- 1/8 tsp. nutmeg
- 3/4 C water
- 1/2 C orange juice
- 1/3 C sugar
- 2 Golden Delicious apples, peeled, cored and cut in half lengthwise
How to Make It:
- Place the cranberry sauce in a mixing bowl.
- Add the orange zest and nutmeg and stir to combine.
- Place a saucepan over medium heat.
- Pour the water and orange juice into the sauce pan.
- Stir in the sugar.
- Simmer for 4 minutes or until the sugar has completely dissolved being sure to stir often.
- Hollow out just a little of the center of each apple half.
- Place the apples in the orange juice mixture.
- Cover the pan and cook on low heat for 20 minutes or until apples are fork tender.
- Remove and drain well.
- Fill each apple center with the cranberry sauce mixture.
Serves 4
This makes a great side dish to any chicken or turkey entrée.
Sprinkle the top with chopped pecan pieces for a special treat.
