Cinnamon Apple Coffee Cake Squares
What You Need:
- 1 3/4 C sugar plus 1 C sugar
- 3 eggs
- 2 C flour
- 1 tsp. salt
- 1 C nuts, chopped and divided
- 1 C canola oil
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 3 TBSP cinnamon plus 2 tsp. cinnamon
- 3 C apples (your favorite), chopped
- 1/4 C butter, melted
How to Make It:
- Place the 1 3/4 C sugar in a large mixing bowl.
- Add the eggs and mix to combine.
- Stir in the canola oil and extract until well blended.
- Stir in the flour until completely moistened.
- Add the baking soda, salt and cinnamon and continue stirring until completely incorporated.
- Fold in the apples and 1/2 C of the chopped nuts.
- Spray a 9 X 13 in pan with a non stick cooking spray.
- Heat the oven temperature to 375 degrees.
- Place 1 C of sugar into a mixing bowl.
- Toss together with the 2 tsp cinnamon and 1/2 C chopped nuts.
- Pour in the butter and mix until ingredients is well combined.
- Pour mixture over the entire top of the cake batter.
- Bake 40 minutes or until toothpick inserted in the center comes out clean.
- Allow to cool before cutting into squares.
Serves 12
Instead of using the cinnamon and nuts in the topping add a few red hot candies to the mix.
