I made this bread in my bread machine with leftover sweet potatoes from our Thanksgiving Dinner and it was fantastic!
I’ve made it before with the same results, it only takes minutes if you already have the sweet potatoes or squash.
If not, it doesn’t take long to cook one up.
This does not make a heavy, orange loaf. It is one of the lightest recipes I have with a perfect chewy crust.
SWEET POTATOE OR SQUASH BREAD MACHINE RECIPE
To make a 1 1/2 lb loaf (it won’t go far!)
- 3/4 cup water (leftover sweet potatoe or squash water is awesome!)
- 1/2 cup cooked sweet potatoe or sweet squash
- milk
- peeled shredded apple or other fruit of your choice – (I used a left over peach that had been sitting in the fridge, just chopped it into small pieces)
- 2 teaspoons olive oil (or oil/butter of your choice)
- 3 1/2 cups bread flour (I like to use a mix – 1 cup white, 1 1/2 cup whole wheat, 1/2 cup nut/seed mix, 1/2 cup kamut flour – organic when possible.)
- 1 tablespoon maple syrup (or you can use brown sugar, mollasses or honey)
- a dash of salt
- 1 teaspoon bread machine yeast
Measure out the ingredients.
Add milk to the sweet potatoe mixture to equal 2/3 cup.
If ingredients are out of the fridge it may help to bring them to room temp, (or cool if you are cooking the sweet potatoes/squash). I did mine straight out of the fridge with no problems.
Add ingredients to your bread machine according to your manufacturers instructions (wet or dry ingredients first)
And voila!
